A Deep-Dive Herbal Preparations Class
Spend an evening immersed in one remarkable root, from soil to shelf to self.
In this hands-on class, we'll trace the full arc of herbal medicine-making with elecampane (Inula helenium) — a warming, aromatic root long used for respiratory and digestive support.
We'll begin at the source: OPTIONAL: students have the option to meet at the instructor's home at 4:30pm (address will be provided to registered participants) to dig elecampane straight from the earth; getting to know the plant's growth habit, root structure, and harvesting technique firsthand.
From there, we'll head to Sweet Willow's commercial kitchen, where the real transformation begins. You'll learn to prepare the same root four distinct ways:
