This is as simple as it gets – take a few bulbs of organic garlic and peel each of the cloves. Put the cloves into a sterilized glass jar that has a lid. Be sure to leave at least 2 inches from the top free of garlic – then pour either Tamari or Honey over the garlic, so that the liquid is 1-1 ½ inches above the level of the garlic. Put the lid on tightly, and shake gently. Leave this on your kitchen counter, and shake gently every day for 2-4 weeks. [NOTE: If you are using honey, it is best to turn the jar upside down and let the honey and garlic drop to the bottom, then turn it back over the next day…and repeat.] After 2-4 weeks, it’s ready to use. If you did the Tamari, this can be used on so many dishes. My favorite is to fix a stir fry, and while that’s cooking, chop up 2-3 cloves of the garlic. Right before serving, toss some of the chopped garlic bulbs on top of the stir fry once you’ve served it onto your plate. If you’re using the honey, you can just eat a bulb, or I like to smash it up and spread it on some toast. You’ll be surprised how “ungarlicy” this garlic tastes!
